2026 Huila Pink Bourbon

Pink Bourbon kept its secret for years: long sold as a blush-coloured mutation of Bourbon, genetic work has since traced it to an Ethiopian landrace that wandered into Colombian fields and stayed. Whatever its passport says, Huila is where it became famous. Grown high above San Agustín and picked only when the cherry turns a true rose-pink, it ferments overnight in sealed tanks before a gentle wash. The cup is why everyone forgives the low yields — silky, honeyed, with an aromatic lift that reads more like a Gesha than its price does. We roast it to keep the perfume and the syrup in balance.
